Why Eat Covenant Pastures Beef?
About Our Cattle
All of our cattle are 100% pasture raised, grass fed and finished with no hormones and no antibiotics. Our cattle are primarily Red or Black Angus, either pure-bred or with a small amount of Hereford cross. Angus is well known as a high quality beef breed, but in particular Angus is excellent for grass fed beef because they give excellent marbling of fat on grass. We monitor the genetics of the parentage in relation to the marbling of the beef to continue to improve our quality. The cattle are also monitored for adequate mineral intake which improves health of the animal and flavor of the beef. We use up to 12 different free-choice organic-certified minerals to maintain excellent gains on native range-land grasses. Any hay we feed is certified organic and glyphosate free.

Live Animal Arrangement. We offer a whole or half a steer or heifer. In this arrangement you legally become the owner of the animal and we process it on farm for you and deliver to the butcher. You are buying the animal, not the meat, but you only have to pick up the meat at the butcher. These steers are harvested humanely at our farm and are transported in a refrigerated truck to our butcher in Bakersfield. You pick up the meat at the butcher when it is ready, we do not deliver. Recent dramatic increases in cost of cattle, butcher fees and organic hay have caused us to increase our prices; please note new prices as of 8/20/2024 below:
The cost is $4.75 per pound live weight at the time of harvest, and there is a $500 deposit required per half. A finished steer or heifer weighs can weigh anywhere between 1100 and 1500 pounds at harvest. You can expect to get anywhere from 36% to 40% of the live weight back as cut and wrapped beef (ground, roasts, steaks, ribs, trim, fat and soup bones) from a steer or heifer. Organs are available too (tongue, tail, heart, liver, kidney and spleen only, no tripe, brain or feet). The lighter the animal, the more percent meat you get because it is leaner and therefore has a higher meat to bone/fat ratio; the heavier the live weight the less percent meat you get because there is more fat and heavier bones, but the marbling is better. If you select more boneless cuts, your cutout percent will be less. Leaner animals typically grade out at Select +, and heavier grade out at Choice + to Prime, which compensates for an increased cost per pound of meat. The total weight you might expect to get of meat + bones can range from 450 lbs to 600 lbs. This usually equates to about $12.00 per pound final/finished cost across all cuts. You should figure that you need about 10-12 cubic feet of freezer space for each half steer. All basic butcher fees are paid by us at no cost to you. The value of this meat in the grocery store today - high grade grass-finished and organic - is more than double the price of what we charge so this is an incredible deal!
Special requests like sausages or pickling tongue are an additional fee. The butcher cut sheet can be downloaded below.
Monthly CSA. Current prices of our monthly boxes of beef is $135 for 10 lbs and $270 for 20 lbs, an average of $13.50/lb across all cuts. Currently only delivering to Bakersfield monthly. the cuts you get are the same as in the Live Animal Arrangement above, just in 10 or 20 lb increments per month.
Cash, Check, Venmo or Zelle payments are accepted.
